Oven Baked Chicken and Rice

This recipe has been a go-to for many years in my family. When I need a quick and easy dinner, I pull out the chicken thighs in the morning and throw this together in the evening. The recipe is simple with few ingredients and it is so good! My whole family loves this simple meal! I have a family of 6, so we tend to need a couple more chicken thighs. If I add in a couple more, it doesn't change the recipe, really! 


5-6 bone in chicken thighs. We love the skin, so we leave it on. But you can remove it, if you prefer. 

1-2 onions, chopped

3 garlic cloves, minced

2 tbsp. butter

1 1/2 cups uncooked rice

1 1/2 cups chicken broth

1 1/4 cups water

Chicken Rub Mixture:

2 tsp paprika

1 tsp dried thyme

1 tsp garlic powder

1 tsp onion powder

3/4 tsp salt

1 tsp black pepper


1. Preheat oven to 350 degrees.

2. Scatter your onion and garlic in your 10 x 15 baking dish. Place the sliced up butter around the dish. Bake for 12-15 minutes. 

3. While baking, mix the chicken rub. Sprinkle it on both sides of your chicken thighs. 

4. Remove baking dish from oven. Add your rice and mix with onions and garlic.

5. Place chicken thighs on top of rice. 

6. Pour chicken broth and water over chicken and rice. 

7. Cover with foil. Bake for 30 minutes. Remove foil, spray chicken with oil. Bake for 20 minutes with foil off, all liquid should absorb. 

8. We usually broil on high for the skin to get a bit crunchy. 

9. Remove and let sit for 5 minutes!

10. Enjoy the fragrant aromas in your home. This is a hot dish, so ensure it cools a bit before you dig in!
