French Breakfast Muffins

Sometime ago I wrote down this recipe from somewhere and never tried it out! Today was the day! I am always looking for quick and easy breakfasts to feed my family of six. Last week my husband had his military retirement and my sisters and mom gifted me a few USA PANS! So, I knew I had to do muffins! I scurried around the kitchen looking for that recipe I had seen on facebook and scribbled down! I have no idea where I found it, so my apologies for not crediting where it came from! 
These were so simple. This recipe made us 20 Muffins! These are the only ingredients you need. 
MUFFINS:
3 cups fresh milled flour (or regular)
1 tbsp. baking powder
1/4 tsp. nutmeg
1 tsp. salt
1 tsp. vanilla
1 cup milk
2/3 cup butter
1 cup sugar
2 eggs
Now, if you WANT to add a topping- you can. I think they are just fine without the added butter and sugar! 
TOPPING:
1/3 cup butter
1/4 cup sugar
1 tsp. cinnmon
Directions:
  • Preheat your oven to 350.
  • Whisk together the flour, baking powder, nutmeg and salt. 
  • Mix the softened butter and sugar until fluffy.
  • Blend in the eggs until fully incorporated.
  • Slowly mix in the flour with the eggs mixture. Alternate out with the milk. Mix well.
  • Add vanilla, mix.
  • Divide batter between your muffin tins, about 2/3 full.
  • Bake 20 minutes, check to ensure toothpick is clear.
IF YOU WANT THE TOPPING go ahead and make it while muffins bake.
Spread on top of finished muffins.
